Green smoothies, i.e. smoothies with vegetables in them, are all the rage these days. Conceptually I am so on board with the idea of drinking your daily servings of vegetables as it’s a sure way to incorporate nutritious, leafy things into your diet.

Unfortunately, so many of concoctions are either frightful to the taste, or include so many sugary elements to mask the taste of the greens, that they end up being worse for your health than a regular fruit smoothie.

That’s where my go-to green smoothie, lovingly named “the best first date” steps in. It is filled with nutrition stars, amongst them: kale, coconut, and cinnamon, and is incredibly delicious. It is frothy, beautifully colored, and is neither cloyingly sweet, nor bitter.

The walnuts are filled with Omega 3’s, the kale and cinnamon are chalk-full of powerful antioxidants, and the coconut water is wonderfully hydrating; all ingredients sure to make your skin glow, and the dates and banana provide a healthy serving of fiber to this gem of a smoothie, which will keep you satisfied for hours.

Though I recommend using a high powered blender such as a Vitamix for it’s ability to consistently nail the perfect texture, any will do, just make sure to keep blending until you’ve reached a desired consistency.

Ingredients:

3-4 leaves of washed organic kale (I use curly green leaf)

2 pitted dates

1/2 cup of coconut water

1/2 cup of unsweetened almond milk

6-8 walnuts

1 teaspoon of cinnamon powder

1 whole banana (frozen work best but if you didn’t plan ahead, you can throw in 2-3 ice cubes to achieve the frozenness factor)
